Scientists at Tufts University have developed a new method for producing a rare sugar that tastes almost identical to table sugar but has fewer negative health effects.
Elchi.az reports that this sweetener, called “Tagatose”, may be a turning point in the search for sugar due to its low-calorie content, minimal effect on blood sugar, and potential benefits for oral and intestinal health.
What is Tagatose and where is it found?
Tagatose is a type of sugar that occurs naturally in dairy products (during heating or enzymatic processing) and in fruits such as apples, pineapples, and oranges, but is very rare in nature.
Since it makes up only 0.2 percent of the total sugar content in fruits, it is quite difficult to extract it directly. Until now, its production has been both inefficient and very expensive. Researchers at Tufts University have developed a biosynthetic solution for this substance.
